A little while ago I tried out the new auto-compression option in iTunes 9.1, and although I didn’t find the results suitable for my tastes, I can see definitely see how others would trade some quality for extra space (especially on smaller 8GB iPhones). However, TUAW recently pointed out that there can be a problem with the syncing proces in iTunes (surprise, surprise) where the software insists on re-converting your tunes every single time you sync.

Thankfully, there seems to be a simple solution from Mac OSX Hints: re-download iTunes. It apparently had something to do with two very similar versions of iTunes 9.1 that are out in the wild, but re-downloading should fix the issue and get you the latest, working version.
