Yup, multi levels of undo would be even better – wonder if that is one of those where Apple has just not figured out how to do it elegantly / well enough yet.

Unfortunately, you can only undo the last action, and then it turns into a redo. So, if you pasted "Cut Copy and Paste Rocks" 10 times and wanted to undo, you'd only be able to take out or put back the last paste.
