PlainText (Free, or $4.99 for ad-free) and Elements ($4.99) are two iOS note apps I know of that feature Dropbox sync, but for all of those other Dropbox-less apps out there, there’s Habilis. All you do is log into Dropbox, set up a Habilis e-mail, and then e-mail your text from your app of choice right to your unique Habilis account. I should note, however, that this didn’t work in Chrome. I had to use Safari to get link Habilis to Dropbox.
Habilis is no two-way sync, but it’s an interesting way to get text — or any file that can be e-mailed from an iOS device — into the über cloud that is your Dropbox account. You could also use Habilis on the Mac, but since you’d have access to Finder you might as well throw the files into the Dropbox folder manually 😛
