A lot of Audio and Video gear is 3U. If I could build a travelling rig and break it down into 3-4 flight cases I will be happy man!

As of now I fly with 5 cases. 3 for preamps, patch bay, amps, A/D D/A converters etc… 1 for tower and 1 for monitors.

Retrofitting Mac Pros so that they can be racked may placate those that want Apples in their datacenter, but 3U is entirely too much space to dedicate in a rack for the privilege of running OS/X. A better solution would be to simply add OS/X to your VMWare farm. If offers all the benefits without wasting so much space.

By the way, a U is a common unit of measurement that describes the height of space occupied in a rack. 1U = 1.75 inches and your typical rack is 42U, which means it holds just over 6 feet of equipment.
